Gump Worsley's Pineapple Squares
Gump Worsley's autobiography They Call Me Gump is one of the most underrated hockey books out there. It's full of fun stories and insight. Not just on the hockey world back in the day either. The Gumper shares some thoughts on other things, including his off-ice hobby: baking.
Hey Jacques Plante knitted toques and underwear, so don't knock Gump for his love of the kitchen. And of course anyone who ever saw the pudgy Worsley play net would quickly understand Gump's love of the pies, cakes and cookies.
But Gump's favorite recipe was Pineapple Squares. Or "Gumpies," as his wife Doreen calls them.
Now, for a limited time only, you too can have Gump's Pineapple Squares. Here is the actual recipe:
1 cup crushed pineapple
1 cup butter
1.5 cups sugar
2 eggs, separated
3 tbsp. milk
1 tsp. vanilla
1/4 tsp. salt
1 cup flour
1 tsp. baking powder
1 cup shredded coconut
Drain pineapple well. Cream butter and 1/2 cup of sugar and add egg yolks, milk, vanilla and salt, beating until smooth and well mixed.
Add flour and baking powder, beating well. Spread very thinly in a lightly buttered 9 x 13 inch pan. Sprinkle pineapple evenly on surface of batter. Beat egg whites until soft peaks form. Beat in remaining sugar and fold in coconut. Spread this on top of the pineapple.
Bake at 350 degrees about 30 minutes. Cool and cut into squares.
